Chicken Sausage with Sweet Potato Curry
4 chicken sausages 2 tablespoons olive oil 1 small onion, diced 3 medium green apples, cored and sliced thinly 4 teaspoons sugar 2 teaspoons salt 2 teaspoons curry powder 1/2 teaspoon chili powder 3 cups cooked sweet potato cubes 2 tablespoons toasted almond piecesIn a large skillet over medium heat, brown sausage on each side in oil. Remove to a plate and keep warm. In remaining oil, sauté onion until soft, about 5 minutes. Add apples, sugar, salt, curry powder, chili powder and sweet potato cubes; bring to a boil stirring often. Reduce heat to medium low, add sausage back to skillet. Cook, uncovered for about 10 minutes, stirring often. Before serving, sprinkle with toasted almonds.
