Jelly and jam are the perfect way to preserve the flavors of summer all year long. The process is really simple and they make perfect holiday gifts. Imagine having all of your holiday gifts ready by the end of June! Here's a great recipe that works for raspberries, cherries or strawberries:

Raspberry Jam
  • 8 cups raspberries, crushed
  • 5 cups sugar
  • 2 tablespoons lemon juice
  • Mix all ingredients in a large kettle. Heat to boiling over high heat, stirring frequently. Boil, stirring frequently, until translucent and jam is thick, about 25 minutes. Quickly skim off foam and pour into hot sterilized jars. Seal and process in a boiling water bath for 10 minutes. Makes 5 half-pints.
