Today's recipe combines two of my favorite flavors - coffee and strawberries. It's a perfect light dessert to celebrate the newest spring crop of berries while keeping the coffee cool!

Coffee Mousse with Strawberries
  • 1 envelope unflavored gelatin
  • 1 teaspoon instant coffee granules
  • 3/4 cup cold water
  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup coffee liqueur
  • 1 cup whipping cream
  • 1 pint strawberries, sliced and sweetened if desired

    Soften gelatin and coffee in cold water in a small saucepan. Heat over low heat, stirring until dissolved. Cool. In a mixing bowl, beat cream cheese, gradually adding sugar. Add liqueur and gelatin mixture, beating well. Put bowl in refrigerator and chill until partially set.

    In another large bowl, whip cream until stiff. Fold into gelatin mixture. Pour into a lightly oiled 4 to 5 cup ring mold. Chill for at least 4 hours. Unmold and spoon sliced strawberries into the center of the ring. Serves 8 to 10.
